Ingredients:
- Orange medium size: 2
- Fresh orange juice 1/4 cup
- Lemon peel: from 1 lemon
- Sugar: 60g
- Cloves: 2
- Star anise: 1

- A pinch of freshly grated nutmeg
- Red wine: 1 bottle
- Ginger juice: 50 ml
Method:
Take a thick saucepan, place it onto the stove pour fresh orange juice, and add in sugar. Now add lemon peel, cinnamon, star anise, and cloves too. Stir it gently and add in ½ cup of wine. Now heat the mixture on a slow heat till sugar just about dissolves.
Slice one orange and add it to the saucepan keeping the heat on slowest. Now bring the mixture to a boil and cook for 4-5 minutes on medium heat till it has a thin syrup-like consistency.
After it attains a syrup-like consistency reduce the heat to the lowest, and start to add the rest of the red wine from the bottle into the saucepan.
Finally add in the ginger juice, gently heat the wine and spices to simmer it for a few minutes, and switch off the heat. Mulled wine is ready to serve now.

To serve cut the thin slices of another orange, place 1-2 orange slices each in a heavy glass { sturdy dimpled half-pint glasses look good and have handles for better hold} and pour wine over the orange slice and serve it warm.
Tip:
However beautiful it may look do not go overboard on start anise because it is very strong flavoured so always less is more.
Even if you don’t use expensive red wine, that will be fine. A cheap red wine bottle works as fine as an expensive one as far as mulled wine is concerned.
